NOTE: China doesn't officially recognize
Christmas, but it is thought that almost
10 million  baptized Christians live in
the country.
Families in China make large meal to
celebrate Christmas.    They  may have
lotus roots fried with ginkgo, pork tongue salad
and a sort of spicy chicken.  Soup with
wood ears  (tough, shelf-like  mushrooms).
Peking duck, five spice peanuts, sesame
seed balls, spring rolls.  Christmas cake
(steamed sponge with fresh fruit), sweet
and sour eggplant, spicy fish, Sichuan
cold noodles...the list goes on.

Christmas isn't a Chinese holiday, but some people observe it with large family meals. There are also more and more Christians in China, as conversion rates have soared in recent years.
