It depends how ambitious or detailed this project is going to be, and whether you are expected to concentrate on any particular aspect of China. However, if you want to start simple, I recommend a very clear website on Chinese history for beginners , which gives a good overview of the country from earliest times to the present, and may help you choose a topic.
If you are looking for something more contemporary, if you just Google "Chinese" + zodiac, or food, or news, or whatever you wish to concentrate on, and there seems to be a good page on just about everything - China is well represented on the internet. (I'd try Google images too.)
Otherwise, your local library is a good resource - Jung Chang's "Wild Swans" is an excellent book on 20th century China, though quite long. Good luck.
