A letter to a friend, particularly one that you have known for a few years is very easy to do. This is because the letter doesn't have to follow any particular rules regarding formality or the language that you use. Informal letters to friends can even contain colloquialisms and sometimes even slang, although, this may not appear to be friendly.

Below are some examples of the language that you could use in your letter. Remember that this is just a guide. Pick out bits and pieces of this to make your letter really personal, so it doesn't just look like you have copied and pasted.
Openings.

Here are some example openings that you could use to start your letter to your friend. If you are the one starting off the letter conversation, then you could use "Dear (friend's name)" or "Hello."

If you are responding to a letter that your friend wrote to, then you could use the following openings: "Thanks for your letter", "It was great to get your letter". If there has been a gap between their letter and yours, then you could say "Sorry for not writing for so long".
Body of letter.

You should then go on to talk about the reason for you writing, if there is one. Then talk about what you have done, in your case, your trip to Scotland and the course that you are attending. Use exclamation marks in the right places to try and convey the sort of emotion that would be present, if you were talking face to face. Maybe even use smiley faces to make this even more obvious.
Signaling the end of the letter.

Knowing where to end your letter can be quite tricky. So here are a few suggestions as to what you could write when you are running out of things to talk about: "I must go now" or "I'll finish now as I'm running out of space".

Ending your letter.

Ending the letter can sometimes be difficult depending on the level of your relationship. If you are quite close friends, then you could close off with "Love (your name)" or a "Hope to hear from you soon", if your relationship is rather new".
